Beides sind essentielle Aminosäuren, die der Mensch (und andere einfache Tiere wie Geflügel) mit der Nahrung aufnehmen muss, da er sie nicht selbst synthetisieren kann. Mais weist auch einen Mangel an einem wichtigen Vitamin auf. Sein Gehalt an Niacin ist gering, und ein Mangel an diesem B-Vitamin führt zu Pellagra (Dermatitis, Diarrhö und Demenz).
